The dream began in June 2023 with husband-and-wife duo Jorge and Senia Handal, who wanted to bring the vibrant flavors of Honduras to their community. Long before the food truck ever hit the road, their journey started in the most personal way possible: cooking for others. Whether it was school birthdays or small local events, the Handals would prepare homemade tacos to share with friends, neighbors, and classmates. What may have seemed like a small gesture at the time quickly became something more meaningful. Their food didn’t just satisfy hunger: it brought people together.
As word spread, so did the excitement. Students and families began to rave about the rich, authentic flavors packed into every bite. What started as a thoughtful act of generosity soon sparked a bigger idea: what if this passion could become something lasting? That question became the foundation of I’guana Tacos.
Today, the truck travels throughout the area, spending most Fridays and Saturdays in the parking lot of Tractor Supply Company in Patterson (check their Instagram weekly to confirm!) serving a growing menu that includes burritos, bowls, quesadillas, and nachos alongside their beloved tacos. Favorites like the Golden Tacos, filled with tender chicken, soft potatoes, and crisp toppings, have quickly become customer staples, while dishes like the carne asada bowl, chicharron tacos, and limited-time fish tacos reflect the family’s personal favorites. Even as the menu expands, the heart of the business remains the same: food made with care, inspired by home.
The Handals have also expanded beyond school events, regularly serving at local gathering spots on weekends and catering celebrations ranging from birthdays to weddings and graduation celebrations. No matter the setting, their goal is consistent: to be part of people’s most meaningful moments, the same way they started.
